Eat

Veggie-licous pasta:

Spray of pam or other non-stick spray
2 tsp olive oil
1/2 onion, finely chopped
2 cloves garlic (I use jars of minced garlic, 1/2 tsp = 1 clove)
1/2 cup baby portabello mushrooms, sliced
1 14 oz. can diced tomatoes, mostly drained (or use fresh!)
1-2 zucchini, sliced
1 cup white wine
salt and pepper to taste
1 tsp italian seasoning (could also use parsley, oregano, and/or thyme)

1 serving of your favorite pasta (I use whole-wheat penne)
parmesean cheese

Spray a large skillet with Pam (for added protection against high heat) and heat the olive oil.  Add the onion and garlic.  Saute 3-5 minutes or until transparent.  Add the mushrooms and saute another 2-3 minutes.  Add the tomatoes, zucchini, white wine, salt and pepper, and herbs.  Simmer for about 20 minutes until slightly reduced.

Serve over pasta and top with cheese.
